Terry Theise on H.BILLIOT

Titre

But I admire this smart, resolute woman, and her Champagnes keep getting better, returning to the style we loved in the first place. These things take time in Champagne, not to mention when you do everything essentially alone. You’ll find them robust and energetic, rather like the lady herself.

Jeb Dunnuck, December 2024

A bright pink color, the NV Champagne Grand Cru Brut Rose is 80% Pinot Noir (8% of which is vin rouge) and reveals notes of poppy red pomegranate berries, clementine, crushed chalky earth, and powder. Zesty and medium-bodied, it has good intensity and a dry feel, with a lively mousse and a rather long finish. It’s going to drink well over the coming 6-8 years.

Jeb Dunnuck, November 202

The nose of the 2015 Champagne Millésime Brut is confected and sunny, although it keeps a fresh fruit profile without oxidation, offering notes of preserved strawberry, fresh pressed roses, and grapefruit. The palate is more open knit that the previous two vintages and is the most approachable for drinking now. It is flush with fresh raspberry, salted citrus, and a floral profile continuing through the end. Drink over the next 10 to 15 years.

Wine Spectator, November 2020

A lush, creamy style enlivened by a spine of mouthwatering acidity, this offers a finely knit range of fresh bread dough, crème de cassis, star anise and candied ginger flavors. The finish is clean-cut and lingering, echoing a rich tang of salted almond.

Jeb Dunnuck, December 2024

Made from 60% Pinot Noir and the rest Chardonnay, with 20% from 2017 and 80% perpetual reserve, the bright yellow/silver-colored NV Champagne Grand Cru Cuvée Laetitia Extra Brut is appealing on opening, rounded with a pretty perfume of brioche, fresh flowers, quince, and red cherries. The mousse is refined and rounded as well, and the wine is medium to full-bodied and dry, without noticeable dosage despite having 8 grams. It’s a very elegant and well-detailed cuvée offering a nice balance of decadence while remaining refined and dry. Drink this over the next 15 years. 8 grams per liter dosage....
