100% Occhiorosso, a very old variety native to Tuscany. The vines are on steep hillsides 500 meters above sea level on silty, sandy soils.
Fermented in stainless steel and aged in 54 litre glass Damigaine.
Occhioroso Difori is a intriguing wine. Just bottled, the 2021 is heavily reduced, and yet behind that lies a serious core of fruit laced with savory and floral notes. Exotic and wild but certainly intriguing.
